Okay, so here are a few tips and tricks for creating a smooth covered cake. First off, Buttercream.
You want to make sure you use a thin consistency buttercream. That doesn't mean watery, because that won't work, but you do need it easy to stir and squeeze through a bag. Here is the simplest fondant recipe ever! Tastes yummy and is easy to work with.
1 16 oz bag mini-marshmallows
1 2 lb bag powdered sugar
2-3 Tbsp water
Vegetable Shortening
Grease down EVERYTHING that you are using with vegetable shortening. Coat the inside of the bowl and the spoon that you are using really well...

A simple recipe to make a mousse/cream like filling in any flavor!
1 c heavy whipping cream
1 3-ouce box dry instant pudding mix
1/3 c sugar
Beat the whipped cream until thick, but not as thick as normal whipped cream. Slowly add sugar while beating. Fold in dry pudding mix and let set for 5-10 minutes...

Credit where credit is due. I got this recipe from AgentCakeBaker on Cake Central! So yummy!
1 stick (1/2 c) salted butter
1 stick (1/2 c) unsalted butter
1 c vegetable shortening
3 Tbsp vanilla (or other) flavoring
2 lbs powdered sugar
5-6 Tbsp cold milk
Cream butters and shortening together until smooth...

This is an easy variation that I came up with! It is so yummy and moist and dense so it will hold up to fondant and decorating. I hope you like it.
1 box white cake mix (I prefer Duncan Hines, but use whatever you like)
1 c flour
1 c sugar
1 3-ounce box strawberry cream instant pudding mix
generous dash of salt
1 c sour cream
1 c strawberry syrup (like Hershey's that you use to flavor milk)
3 eggs
